SFCC only has color and size variations out of the box. If you have product variants in Marketplacer in addition to Color and Size, then you need to set these up in SFCC. Note that you will need to use US spelling in SFCC.
Product categories
Marketplacer refers to SFCC product categories as taxons in its code. This means that an extra mapping step is required to ensure that the product category setup in SFCC is mirrored in Marketplacer, and then sync will work correctly.
